Avocado and Quinoa Mac N Cheese

Today’s recipe comes courtesy of Two Peas and Their Pod.

But of course I had to give it a unique Sookton spin.

Avocados! I am so obsessed with them.This recipe was satisfying and oh so delicious! Perfect for summer dinners.

Your Ingredients:

10 ounces rotelle quinoa pasta
2 cloves garlic, minced
2 avocados, peeled and pitted
2 tablespoons fresh lime juice
1/3 cup chopped fresh cilantro
Salt and pepper, to taste
2 tablespoons butter/margarine
2 cups shredded white cheddar cheese (or any cheese you like)
Basil to taste
Salt and pepper, to taste
Fresh avocado chunks, for garnish, if desired

Cooking Directions

  1. Bring water to a boil. Add quinoa pasta and cook for 8 to 10 minutes (or until el dente).
  2. While the pasta is cooking place the avocado (cut into small chunks) into a big bowl with the cilantro, garlic, lime juice, basil, salt and pepper. Mash up everything till the consistency is a little more smooth.
  3. Drain the pasta then return it to the hot pan. Add the avocado and mix together with the butter.
  4. Place in a serving bowl and add as much cheese (or as little cheese) as you desire.
  5. Enjoy!

    looks good! i will have to give this a try. i’m using avocado in everything now…smoothies, pudding, pesto.
